I recall a method that is good for a very quick freeze, and it doesn't involve liquid nitrogen...

I think it involved a hell of a lot of ice and a blender. But that recipe sounds quite tantalising, especially as I have a bit of an addiction to mint, but I've never tried Pimm's before so that will be quite interesting. And, of course, it will have a percentage so more reason to test it out!
